Ela afeta principalmente a transpira\u00e7\u00e3o do produto colhido. Ar seco, com percentagem de umidade abaixo daquela requerida pelo vegetal, significa perda r\u00e1pida de umidade pelo produto e conseq\u00fcente murchamento e enrugamento, depreciando-o comercialmente. Ar muito \u00famido, pr\u00f3ximo a satura\u00e7\u00e3o de 100%, mant\u00e9m a turgidez e reduz a perda de \u00e1gua, mas favorece o desenvolvimento e dissemina\u00e7\u00e3o de microorganismos e o enraizamento de algumas hortali\u00e7as como o alho e a cebola. Para manter a qualidade, a umidade relativa do ar ideal para a maioria das frutas e hortali\u00e7as encontra-se entre 85 e 95%.<\/p>\n<p style=\"TEXT-ALIGN: justify\">A <strong>concentra\u00e7\u00e3o de oxig\u00eanio e de g\u00e1s carb\u00f4nico no ar<\/strong>, ou seja, a composi\u00e7\u00e3o atmosf\u00e9rica, tamb\u00e9m influi na conserva\u00e7\u00e3o de vegetais. A redu\u00e7\u00e3o de oxig\u00eanio no ar, leva a diminui\u00e7\u00e3o do n\u00edvel de respira\u00e7\u00e3o. Por\u00e9m, \u00e9 importante que a fruta ou hortali\u00e7a esteja sempre respirando um pouco para n\u00e3o ocorrer fermenta\u00e7\u00e3o. O aumento na concentra\u00e7\u00e3o de g\u00e1s carb\u00f4nico no ambiente reduz a respira\u00e7\u00e3o e aumenta sua concentra\u00e7\u00e3o nas c\u00e9lulas.
